What are microgreens?
Microgreens are the first true leaves of a plant, harvested 1–3 weeks after germination, before the seedling develops full foliage. They are larger than sprouts but still tender enough to eat raw or lightly cooked. Unlike mature greens, microgreens pack a concentrated punch of flavor and nutrition in a tiny package.
What are the health benefits?
Research suggests microgreens contain 4 to 40 times the nutrients of their fully grown counterparts. In a single handful you can get:
- 2-5x the vitamin C of mature greens
- 4-12x the beta-carotene (vitamin A)
- 3-4x the antioxidant content
- 1.5-3x the minerals (iron, magnesium, zinc)

How should I store microgreens?
- Refrigerate: Storing microgreens in an airtight container lined with a paper towel inside works best. They should last for 6-14 days in the refrigerator.
- Wash (only before use): Even though we grow our microgreens in a controlled environment free of pesticides, you may wash them before consuming. You do not need to wash them before storing; the added moisture will greatly decrease their shelf life.
What are some recipe ideas?
Arugula (Peppery)
- Arugula & Citrus Salad: Toss with orange segments, shaved Parmesan, and a light vinaigrette.
- Garnish for Sushi: Add a few leaves to sushi rolls for an extra zing.
Radish (Spicy)
